Key Responsibilities
Restaurant Operations
- Manage the full day-to-day operations of the restaurant.
- Ensure full compliance with Mugg & Bean brand standards across all service areas.
- Deliver exceptional guest experiences across breakfast, lunch, dinner, coffee, bakery, and takeaway services.
- Ensure the restaurant is fully prepared for trade before opening each day.
- Monitor service speed, table turnover, guest complaints, product availability, and cleanliness.
- Enforce all operational procedures, checklists, and control systems daily.
- Maintain strong floor presence during peak trading periods to drive service excellence.
- Ensure optimal staffing levels and effective manager deployment during all shifts.
Financial Performance
- Drive sales growth through superior guest service, local store marketing, and operational execution.
- Control food cost, labour cost, wastage, discounts, refunds, and all controllable expenses.
- Review daily sales performance, cash handling, voids, discounts, and product mix.
- Ensure strict compliance with cash management, banking, and reconciliation procedures.
- Manage stock levels and minimize stock losses through strong controls.
- Support budgeting, forecasting, and weekly performance reviews.
People Management
- Recruit, train, coach, and develop restaurant team members.
- Build and sustain a positive, disciplined, and performance-driven culture.
- Manage staff schedules, attendance, grooming standards, and productivity.
- Conduct daily briefings and shift handovers to ensure alignment.
- Ensure all employees understand brand standards, service expectations, and product knowledge.
- Address performance issues, misconduct, and disciplinary matters professionally.
- Develop assistant managers, supervisors, waitrons, baristas, and kitchen leaders.
Guest Experience
- Ensure every guest receives warm, friendly, and efficient service.
- Resolve guest complaints quickly, professionally, and effectively.
- Maintain high standards in service delivery, food presentation, coffee quality, and ambience.
- Monitor guest feedback, online reviews, and repeat visitation trends.
- Strengthen menu knowledge, upselling, and guest engagement across the team.
Food Safety, Hygiene & Compliance
- Enforce full compliance with food safety, hygiene, and occupational health standards.
- Ensure daily cleaning schedules and pest control measures are completed.
- Monitor food storage, temperature controls, and expiry management.
- Maintain a clean, safe, and audit-ready restaurant environment at all times.
- Ensure compliance with Ghanaian labour, health, safety, and company regulations.
Brand Standards
- Protect and uphold the Mugg & Bean brand at all times.
- Ensure correct execution of recipes, portions, presentation, uniforms, and service procedures.
- Prepare the restaurant for internal and external audits.
- Identify and correct any brand standard deviations immediately.
Qualifications and Requirements
- Proven experience as a General Restaurant Manager, Assistant General Manager, or senior manager within Mugg & Bean.
- Strong operational knowledge of Mugg & Bean systems, service standards, and brand culture.
- Experience managing full-service casual dining restaurants.
- Strong financial acumen, including sales, food cost, labour cost, wastage, and stock control.
- Proven leadership and people management capabilities.
- Strong guest service orientation with a hands-on management style.
- Ability to work under pressure and manage high-volume trading environments.
- Excellent communication skills in English.
- Willingness to relocate to Ghana or work in Ghana.
- Must not currently be employed by an active Mugg & Bean franchisee.
- Must not breach any franchise, employment, or non-solicitation agreements.
Preferred Experience
- Previous Mugg & Bean opening experience is essential.
- Experience training and developing new restaurant teams.
- Exposure to African or South African Mugg & Bean operations.
- Experience across coffee shop, bakery, and full-service dining environments.
- Strong background managing both front-of-house and back-of-house teams.
