Key Responsibilities
Kitchen Operations
- Manage the full daily kitchen operation across all food preparation areas.
- Ensure all food is prepared according to Mugg & Bean recipes and brand standards.
- Oversee breakfast, grill, bakery, sandwiches, salads, desserts, and all menu categories.
- Ensure food is prepared quickly, accurately, and consistently at all times.
- Maintain kitchen readiness before opening and throughout peak trading periods.
- Monitor ticket times and support fast, efficient service delivery.
- Ensure all kitchen equipment is clean, functional, and correctly used.
- Maintain a clean, organized, and disciplined kitchen environment at all times.
Food Quality and Brand Standards
- Ensure all dishes meet approved Mugg & Bean specifications.
- Control portioning, plating, garnishing, and presentation standards.
- Prevent unauthorized recipe changes or ingredient substitutions.
- Check food quality before dispatch from the kitchen.
- Maintain consistency across all menu items served.
- Train kitchen staff on recipes, preparation methods, and brand standards.
- Prepare the kitchen for internal and external brand audits.
Stock Control and Cost Management
- Manage daily stock usage, ordering, receiving, storage, and transfers.
- Control wastage, overproduction, spoilage, and incorrect preparation.
- Conduct daily and weekly stock counts.
- Ensure correct stock rotation using FIFO principles.
- Monitor high-value and sensitive stock items.
- Support achievement of food cost targets with the General Restaurant Manager.
- Investigate stock variances and implement corrective actions.
Food Safety, Hygiene, and Compliance
- Ensure strict compliance with food safety and hygiene regulations.
- Monitor all temperature controls for storage, cooking, and holding.
- Ensure proper labelling, dating, storage, and rotation of all food items.
- Enforce daily cleaning schedules and sanitation standards.
- Maintain safe kitchen practices at all times.
- Ensure correct personal hygiene, uniform, and handwashing procedures.
- Oversee pest control, waste management, and chemical handling standards.
- Maintain a fully audit-ready kitchen environment.
People Management
- Lead, train, and supervise the kitchen team effectively.
- Allocate duties to chefs, cooks, prep staff, scullers, and bakery team members.
- Conduct daily kitchen briefings and shift handovers.
- Monitor attendance, discipline, grooming, and productivity.
- Train new staff on recipes, equipment, safety, and hygiene standards.
- Address performance issues and support corrective actions.
- Build a disciplined, efficient, and high-performance kitchen culture.
Equipment and Maintenance
- Ensure safe and proper use of all kitchen equipment.
- Report maintenance issues immediately for resolution.
- Oversee preventative maintenance and daily cleaning routines.
- Minimize equipment misuse and breakages.
- Maintain an efficient kitchen layout that supports speed and consistency.
Qualifications and Requirements
- Proven experience as a Kitchen Manager, Head Chef, Senior Chef, or Kitchen Supervisor within Mugg & Bean.
- Strong knowledge of Mugg & Bean recipes, kitchen systems, and brand standards.
- Experience managing a high-volume, full-service casual dining kitchen.
- Strong expertise in food safety, hygiene, and compliance.
- Proven ability in stock control, food cost management, and wastage reduction.
- Ability to lead, train, and discipline kitchen teams effectively.
- Strong performance under pressure in high-volume trading environments.
- Excellent communication skills in English.
- Willingness to relocate to Ghana or work in Ghana.
- Must not currently be employed by an active Mugg & Bean franchisee.
- Must comply with all franchise and employment obligations.
Preferred Experience
- Mugg & Bean opening experience is essential.
- Experience training and developing new kitchen teams.
- Exposure to Mugg & Bean operations in Africa or South Africa.
- Experience in coffee shop, bakery, and full-service dining environments.
- Experience managing both front-of-house and back-of-house collaboration.
