We are seeking an experienced, visionary, and results-driven Executive Chef to lead our culinary operations. The successful candidate will oversee all kitchen functions, drive menu innovation, maintain exceptional food quality, develop high-performing teams, and ensure operational excellence across the kitchen.

Key Responsibilities

Culinary Leadership

  • Lead and oversee all kitchen operations to ensure the consistent delivery of exceptional food quality and service.
  • Develop innovative menus that reflect the restaurant’s culinary vision, market trends, and customer preferences.
  • Establish and maintain recipes, portion standards, and presentation guidelines.
  • Drive continuous improvement in culinary techniques, product quality, and guest satisfaction.
  • Ensure consistency across all food offerings and service periods.

Kitchen Operations Management

  • Plan, organise, and supervise all food production activities.
  • Manage kitchen staffing, scheduling, and daily workflow to maximise operational efficiency.
  • Ensure timely preparation and delivery of meals while maintaining quality standards.
  • Monitor kitchen productivity and implement improvements where necessary.
  • Maintain effective communication between kitchen and front-of-house teams.

Financial & Cost Management

  • Develop and manage kitchen budgets and operational costs.
  • Monitor food costs, labour expenses, and inventory to maximise profitability.
  • Implement effective portion control and waste reduction strategies.
  • Oversee purchasing activities and maintain strong relationships with approved suppliers.
  • Analyse kitchen performance and recommend initiatives to improve financial results.

Food Safety & Quality Assurance

  • Ensure full compliance with food safety, hygiene, sanitation, and health regulations.
  • Maintain the highest standards of cleanliness throughout all kitchen operations.
  • Conduct regular quality checks to ensure food consistency, freshness, and presentation.
  • Ensure proper storage, handling, and rotation of food products.
  • Promote a culture of safety and operational excellence within the kitchen.

Team Leadership & Development

  • Recruit, train, mentor, and develop chefs and kitchen staff.
  • Foster a culture of teamwork, accountability, creativity, and continuous learning.
  • Conduct performance evaluations and provide coaching to enhance employee development.
  • Build a motivated, high-performing culinary team committed to excellence.
  • Lead by example and inspire exceptional performance across the kitchen.

Customer Experience & Innovation

  • Monitor guest feedback and continuously improve menu offerings and service quality.
  • Collaborate with management on promotions, special events, catering services, and seasonal menus.
  • Introduce innovative culinary concepts that strengthen Oliver Twist Shack’s brand and reputation.
  • Ensure every dish reflects the restaurant’s commitment to excellence and customer satisfaction.

Qualifications & Experience

  • Diploma or Bachelor’s degree in Culinary Arts, Hospitality Management, Food Production, or a related field.
  • Minimum of seven (7) years of progressive culinary experience, including at least three (3) years in a senior leadership role as Executive Chef, Head Chef, or Executive Sous Chef.
  • Proven experience leading high-volume restaurant or hospitality kitchen operations.
  • Strong knowledge of international and local cuisine, menu development, and food presentation.
  • Comprehensive understanding of food safety regulations, inventory management, and kitchen financial management.
