Key Responsibilities
Culinary Development and Menu Excellence
As the Brand Head Chef, you will:
- Lead the development of the complete Mugg & Bean Ghana menu across casual dining, bakery, breakfast, and café offerings.
- Create, test, validate, and standardize recipes that can be consistently reproduced across multiple restaurant locations.
- Balance culinary innovation with operational efficiency while achieving food cost targets.
- Continuously review and improve menu offerings based on customer feedback, market trends, and business performance.
Standards, Recipes, and Operational Procedures
You will:
- Develop and maintain standardized recipes, product specifications, portion controls, and plating guidelines.
- Prepare and update kitchen Standard Operating Procedures (SOPs).
- Establish quality standards and ensure consistent execution across all restaurants.
- Prevent unauthorized recipe modifications or ingredient substitutions to protect brand integrity.
Kitchen Operations
You will:
- Lead day-to-day kitchen operations during the launch of the first Mugg & Bean Ghana restaurant.
- Provide technical input into kitchen design, equipment selection, workflow, and layout for new restaurant openings.
- Ensure production readiness across breakfast, lunch, dinner, bakery, and café operations.
- Monitor service performance, ticket times, food quality, and operational efficiency.
- Maintain clean, organized, and disciplined kitchen environments that meet brand standards.
Leadership and Team Development
You will:
- Recruit, coach, and develop high-performing kitchen teams for new restaurant openings and future expansion.
- Design training programmes, onboarding materials, and culinary development initiatives.
- Lead daily kitchen briefings and foster a culture of teamwork, accountability, and excellence.
- Conduct performance evaluations and implement coaching and corrective action where necessary.
Supply Chain and Cost Management
You will:
- Partner with Supply Chain and Procurement teams to source, evaluate, and approve ingredients and suppliers.
- Ensure compliance with approved product specifications and centralized purchasing requirements.
- Monitor inventory levels and minimize food waste, spoilage, and overproduction.
- Drive initiatives that improve food cost performance while maintaining product quality.
Food Safety and Compliance
You will:
- Ensure full compliance with food safety regulations, hygiene standards, and company policies.
- Monitor food storage, labeling, stock rotation, temperature controls, and sanitation practices.
- Maintain kitchen audit readiness through effective cleaning schedules and safe work procedures.
- Promote a culture of food safety and continuous compliance across all kitchen operations.
Qualifications and Experience
The ideal candidate should possess:
- Proven experience as a Head Chef, Executive Chef, Executive Sous Chef, or Senior Chef within a casual dining, bakery, café, or premium hospitality environment.
- Demonstrated experience in menu development, product validation, recipe creation, and culinary standardization.
- Experience establishing kitchens and leading restaurant pre-opening projects.
- Strong knowledge of bakery production, breakfast service, café operations, and casual dining concepts.
- Proven experience developing and implementing recipes, specifications, and Standard Operating Procedures (SOPs).
- Excellent knowledge of food safety regulations, hygiene standards, and quality assurance systems.
- Strong experience in inventory management, food cost control, supplier management, and purchasing.
- Proven ability to recruit, mentor, and lead high-performing culinary teams.
- Previous experience within the Ghanaian or West African hospitality market will be highly advantageous.
- Ability to work hands-on during a fast-paced business launch and expansion phase.
- Excellent communication and leadership skills with fluency in English.
- Willingness to be based in Ghana and travel within Ghana and the wider West African region when required.
Preferred Experience
Candidates with the following experience will have an added advantage:
- Experience managing culinary operations across multiple restaurant locations or franchise brands.
- Previous experience with internationally recognized brands such as Mugg & Bean, Paul, Maison Kayser, or similar casual dining, bakery, or café concepts.
- Experience training kitchen teams in new markets and supporting restaurant openings.
- Proven success opening multiple restaurant locations.
- Experience working with central production kitchens, commissaries, and approved supplier programmes.
- Demonstrated ability to scale culinary operations from a single restaurant to a multi-site network.
